These microgreens can be eaten raw or cooked, both ways are delicious. This dish is inspired by the popular Thai Style Lemon Steamed Fish, a very refreshing dish packed with flavours. The bursting flavour of this dish lies in the broth of chilli, garlic and lemon, combined with the result of the sweetness from the freshly steamed Squid juice, goes so well with the lightly steamed Microgreen Convolvulus. Ingredients

3 Squid, cleaned
Salt and pepper
100g Microgreen Convolvulus Kangkung

Sauce:
A few pieces of lemongrass
¼ cup minced garlic
3-4 chopped chilli padi, adjust to taste
1 cup of chicken stock or fish stock
1 lemon juice
1 tablespoon fish sauce
1 tablespoon light soya sauce
1 tablespoon sugar

Methods

  1. Clean and slice the squid into smaller pieces, season with salt and pepper.
  2. Mix all the sauce ingredient together.
  3. Pour the sauce on the squid to marinate and let it sit for 10 minutes.
  4. Place the Squid in the hot steamer, cover with a lid and steam for 4-5 minutes. Turn off the heat.
  5. Open the lid and place the microgreens in the hot steamer, on top of the squid, let it sit for 30 second – 1 minute.
  6. Carefully remove the plate of squid from the steamer and serve hot.

Swap with other types of seafood: This dish goes well with any seafood such as fish and prawn.
