Homemade Fish Ball Soup with Microgreen Pea Recipe
Our co-founder started making homemade fish balls at home due to their toddler’s allergy, that’s the only way they would know what goes inside the ingredients. It takes quite a bit of time to make Fish Ball at home, but it’s worth the effort. You can use Mackerel (马鲛鱼) and Wholfhering (Ikan Parang/西刀鱼), which are most common fish to make bouncy fish balls. We use Organic Tilapia fish purchasing from an Aquaponic farm, although its less bouncy in texture, it still taste wonderful with a character of its own and it’s a change from the usual store-bought Fish Balls. This recipe is very much a kids-friendly recipe, everything homemade from scratch even the fish stock! It’s important to make sure the fish is fresh, that’s where you get a fresh soup without the fishy odour! We use Microgreen Sweet Pea in this recipe, but you can use any other Microgreen Pea. We grow them a little bit taller without too much lights involve to get a really nice and tender, thin and tall Microgreen Pea to go with this soup recipe.

Ingredients

1 whole Organic Tilapia with bones and head (about 1kg)
1 teaspoon Tapioca Starch or Corn Starch
Salt and pepper, to taste
1 big bunch Microgreen Pea
4 ginger slice
3 garlic cloves
1 cup homemade chicken stock
5 red dates, pitted
⅓ cup goji berries
1 tablespoon Coconut oil
1 soft tofu, cubed
1 cup oyster mushroom
1 tablespoon Coconut Aminos
1 teaspoon sesame oil

Methods

  1. To make fish balls: Clean the fish and pat dry with paper towels. Filet the fish along the bones and place them in another bowl. Keep the fish head and bones to make soup. Remove the fish meat from its skin by scraping them off with a spoon. The traditional way is to chop the fish meat with the back of the chinese cleaver, here we use a blender. Chop a small bunch of Microgreen Pea and place it in the blender together with the fish meat, add starch, salt and pepper and blend until the texture become a paste. Take a spoon and shape them into a round shape. Bring water to boil in a soup pot, place the fish balls to boil for 3-5 minutes, remove fish balls and transfer them into an ice water bath. They freeze well, but try to consume them fresh.
  2. To make soup: In a large soup pot, heat coconut oil and place ginger slice and garlic cloves, stir for few minutes. Add fish bones and fry till golden brown. Add chicken stock and water, cover and bring to boil on high heat, then let it boil on low to medium heat for 20-30 minutes or until soup is flavourful. Strained the soup and bring the soup to boil with red dates and goji berries for another 10minutes.
  3. Add fish balls, tofu, oyster mushrooms and Coconut Aminos, bring it to boil for a few minutes. Off the heat, add Microgreen Pea and cover for 1 minute. Add Sesame oil and serve immediately. Add noodle of your choice or serve with rice.
