Ingredients

200g Microgreen Pea
100g Parmesan cheese
2 cloves of garlic
50g Walnuts
50g Cashew nuts
1 lemon
½ teaspoon salt
100ml extra virgin olive oil

Methods

  1. Wash and spin dry freshly harvested Microgreen Pea in a salad spinner, then pop it in the blender.
  2. Peel and add the garlic, add Parmesan cheese, walnuts and cashew nuts.
  3. Finely grate in the lemon zest, squeeze in all the lemon juice, add salt and pour the olive oil in the blender.
  4. Process until the mixture is well blended but still has some texture, pausing to scrape down the sides as necessary. Taste and adjust base on your liking, you can add more olive oil if you prefer a smoother consistency.

Notes:

Dairy free option: Omit Parmesan cheese or replace it with dairy free cheese or 1 tablespoon of nutritional yeast.
Nuts option: Pine nuts are traditional choice to make pesto. You can interchange it with any other nuts such as almond, pecans, or alternatively go nut free with sunflower seeds or pumpkin seeds.
