The delicious combination of pesto sauce and salmon, the crispy and nutty flavour from the freshly baked pesto toppings brings this dish to a whole new level. Here, we garnished our dish with Microgreen Swiss Chard Red and Yellow Sunrise, Purple Cabbage and Broccoli.

Ingredients

200g salmon fillet
50g Microgreen Pea Pesto sauce (recipe here)
20g asparagus
50g cherry tomatoes, cut into half
Salt
Pepper
Olive oil

Methods

  1. Preheat oven to 180°C
  2. Clean and pat dry salmon fillet. Season salmon fillet with salt and pepper.
  3. Trim the pale end of the asparagus stalks and lay them on a baking tray, drizzle some olive oil.
  4. Stack seasoned salmon fillet on top of the asparagus, then spread the pesto sauce generously on top of the salmon fillet. Lastly, place the cherry tomatoes on top.
    5. Bake for 25-30 minutes, check the doneness of salmon to your preferred liking and ready to serve.

Notes:

Swap Asparagus: You can replace asparagus with other vegetables such as long beans, zucchini, sweet peas, bell peppers, sweet potatoes, potatoes, mushroom etc.
