Ingredients

3 tablespoon Oil
40g Ikan Bilis (Anchovies)
1 garlic clove, chopped
1 red onion / Bawang Merah
Peanut Sprouts
Microgreen Convolvulus Kangkung
Microgreen Pearl Soy Bean
2 tablespoon Sambal Oelek
1 teaspoon soya sauce
½ Lime juice
2 chillies

Sambal Oelek ingredients:
300g chilli
2 tablespoon of lime juice
2 garlic cloves
1 tablespoon salt
1 teaspoon sugar

Methods

  1. To make Sambal Oelek: Add all the ingredients into a food processor, grind until puree form. We like it the traditional way, which is to eat it raw, you can also simmer the sambal over low-medium heat for a few minutes.
  2. Heat 2 tablespoon of oil in a pan, add Ikan Bilis and cook on low-medium heat for 4-5 minutes, or until almost golden brown. Turn up the heat and stir for 1 minute until the Ikan Bilis turn crispy. Set aside.
  3. Heat 1 tablespoon of oil in a wok, add red onion and garlic, stir till lightly golden brown.
  4. Add Peanut Sprouts and stir for a few minutes, then add Microgreen Convolvulus Kangkung and Pearl Soy Bean, quickly stir fry it with Sambal Oelek and soya sauce until its well combined.
  5. Plate the dish and top it with crispy Ikan Bilis. Squeeze some lime juice on the dish and serve hot.
