We top it with some Microgreen Purple Kohlrabi, they are just so easy to grow and fast to germinate. Japanese Onsen eggs literally means ‘hot spring eggs’ in Japanese language, originally made with hot spring water. This silky and custard eggs are great addition to rice bowl or noodles. The uncracked Onsen eggs store well in refrigerator for 1-2 days.

Ingredients

4 eggs

Sauce
¼ cup dashi
½ tablespoon Mirin
1 ½ tablespoon Soy Sauce
½ cup Microgreens (we use Microgreen Mustard and Purple Kohlrabi)

Methods

  1. To make Onsen eggs: in a pot, bring water to boil, turn off the heat. Place eggs in the hot water for 12 minutes, ideally the eggs doesn’t touch each other. Remove eggs from hot water and transfer them in ice water bath for 8-10 minutes.
  2. Mix sauce until its well combined.
  3. Crack the egg and pour the sauce over and garnish generously with Microgreens.
