Peanut Sprouts are called the longevity sprouts in Chinese (长寿芽/万寿芽) due to its nutritional value since ancient times. Peanut sprouts are delicious and said to be easier to digest than peanuts, leading to faster nutrient absorption. Taste like a crunchier and nuttier version of Turnip (locally known as Sengkuang), if you like the refreshing flavour and texture of Turnip, you will love Peanut Sprouts. They can be eaten raw in salad or snack it with sambal, cook in soup, steam, or stir-fry like this recipe. This dish is really easy to make. Ingredients

2 cup Peanut Sprout (or any amount harvested)
2 cloves garlic, finely chopped
1 chilli, chopped
2 Shiitake mushroom, sliced
1 tablespoon olive oil
1 tablespoon soya sauce
1 teaspoon oyster sauce (optional)
1 teaspoon chinese cooking wine (optional)

Methods

  1. Heat the oil in a deep frying pan or wok. Add garlic and stir till golden in colour.
  2. Add chilli, mushroom and peanut sprouts and stir for 4-5 minutes, or until peanut sprouts are tender-crisp.
  3. Add soya sauce, oyster sauce and Chinese cooking wine and stir for another few minutes until mixed well.
  4. Serve hot.

Notes:

Meat option: This dish goes well with any poultry, pork or beef. Simply marinate the meat in soya sauce, oyster sauce, chinese cooking wine and pepper, then tenderise it with a thin coat of corn starch. Let it sit for 10 minutes and stir fry them before adding Peanut Sprouts.
